Guys, I really didn’t want to post another recipe so soon, but I had SO MANY people asking me for the recipe (I don’t blame them, they look DELISH and taste even better!!) So I hope you forgive the bajillion recipes I’ve been posting lately. I mean, it’s kind of my obsession and it’s what is making me feel “pretty” if you will. So enjoy!

Ingredients
1 lb lean ground beef
1/4 c. taco seasoning
24 Wonton Wraps
1.5 c. fat free refried beans
6 T salsa
1/2 c. reduced fat mild cheddar cheese
Directions Preheat oven to 375 degrees
1. Brown beef, drain, add in taco mix and 1/3 cup water. Mix and let simmer for taste.
2. Spray muffin tin with nonstick spray and line each spot with wonton wrapper.
3. Scoop a heaping tablespoon of refried beans onto each wrapper and spread out.
4. Place another wonton wrapper on top of beans, and press down, making a flat surface, but leaving the wrapper edges up.
5. Place 1/2 T of salsa in each tin, followed by 2 T of beef to fill the cups.
6. Top with a pinch of cheese.
7. Bake for 20-25 minutes or until wonton appears golden brown and cheese has melted on top.
You could easily add twists and turns to these. You can garnish with plain greek yogurt, hot sauce, and lettuce. You can add rice to the mix and less meat per cupcake and basically double the batch for around the same calories. You could try mozerella cheese for less calories…the possibilities are endless!
I hope you enjoy this recipe, because I seriously did. It’s SO NICE because I loooove tacos and nachos, but tortillas and tortilla chips are usually pretty high calorie! These wonton wraps are an amazing alternative. I would eat these even if I WASN’T on a diet. Yeah, it’s that tasty.
