Oh my glob. I love this recipe. I’ve made it many times, but this last time I decided to really load it up with some extra veggies. And this time I am sharing it! Of course, it’s one of those you can add or subtract ANYTHING from it because basically any way you make it will be delightful. Basically, the chicken juices mixed with the salsa help to give the potatoes a realllly good flavor.
Like most of my recipes, this one is very simple and uses every day ingredients. This recipe is also low calorie! Depending on the brands you use, the calories will differ- but each of my Pollo Packs were 275 calories for a LOT of food. I paired ours with refried beans because they are so yummy! I hope you try this one out and enjoy!
Pollo Packs (Mexican Chicken Foil Dinners)
Serves 4, Approx. 275 calories per pack
16 oz Boneless, Skinless Chicken Breast
4 Medium Potatoes (I used Yukon Gold)
1 Small Zucchini
1/2 Small, Sweet Onion
1/2 Cup of Grape or Cherry Tomatoes
1/2 Cup of Low Fat Mozzarella Cheese
8 T Salsa
Seasoning to Taste (I used a sprinkle of taco seasoning, salt & pepper.)
Directions
- Pre-heat oven to 400 degrees.
- Prepare 4 large sheets of aluminum foil by spraying them with no stick cooking spray on one side.
- Equally distribute chopped potatoes, zuchini, tomatoes and onions on to the 4 pieces of foil as a base.
- Salt & pepper veggies.
- Place 4oz raw, sliced chicken on top of each pack & sprinkle with other seasoning if preferred. (I used taco seasoning, could use cumin, garlic, chili powder, etc.)
- Top chicken with 2 T of salsa and 1/8 cup of cheese each.
- Fold aluminum foil and roll ends so that any juices do not leak out.
- Place closed packs onto a cooking sheet.
- Bake for 25-35 minutes, or until potatoes are cooked through.
- You can open one pack up to check the potatoes to be sure they are tender. They definitely take longer to cook than the chicken. I have had a few times where I was too impatient to wait and check and the potatoes weren’t cooked all the way. We just popped them in the microwave for a few minutes, but they will definitely taste best if they cook to completion.
- Your pack will likely be veeery juicy. I usually just drain the excess juice from the pack before opening fully to serve. (If you collect the juices, you can use it to make some awesome rice to serve with the dish or for later on!)
