When you’re ballin’ on a budget (like yours truly,) you tend to buy the pork tenderloin. There are many reasons to purchase a pork tenderloin, but my main reason is that they always seem to be cheap, and then Target marks them down to even CHEAPER just a few days before the sell by date. You can get around 1.5 lbs for ~$6.00. No complaints here!
Anyway, I have a delicious, super easy recipe for you today. I adapted it from a recipe that a coworker brought in to a pitch in to make it a bit more healthy. (His wife found it on Pinterest!) But my recipe is still made with sugar…so it’s not THE healthiest of things! (Still low calorie, though.) If you want the simplest recipe in the world, read below.
Ingredients
1.5 lb pork tenderloin roast
3/4 cup of salsa
1/4 cup of brown sugar
Directions
1. Place pork in Crockpot.
2. Cover with salsa, then with brown sugar.
3. Cook on low for 5-6 hours.
4. Shred pork & mix into juices.
5. Serve on taco shells, bread, nachos, etc. I served the pork on tacos with cole slaw & ranch! (Delish!)
My servings were 165 calories each. Be sure to calculate your own ingredients to be sure. :)
Enjoy! This is such a great weeknight meal. You can even freeze the leftovers to make it THAT much easier for the next weeknight meal.
