Do you ring your New Year in with cabbage? I have every single year since I was a wee little lady. My grandma made “Hobo Stew” for us, which was jam-packed with cabbage, potatoes, and veggies. I began to make it myself when I moved out, and I don’t just reserve it for the New Year anymore. I find that it’s a filling, inexpensive, and simple meal that can last for a week’s worth of lunches for my husband and I as well. Hobo Stew is great for the winter months, and just makes me feel really cozy and warm inside!
I wanted to share this recipe with you, and my original intent was to take it from HOBO to HOBO CHIC by adding in fresh vegetables, and some more exotic vegetables at that. I went out and found purple potatoes and multi-colored carrots. I figured it could help to change the overall color of the stew, making it much more appealing. While the colors were vibrant and beautifully to begin with, when I cooked them, they kind of faded out. They were still fun to work with, so I can’t complain too much! Check out the pretty colors!

- 2-3 lbs. potatoes, any variety, peeled
- 1/2 head of cabbage
- 1 cup chopped carrots
- 1 package of cubed ham
- 1 can of green beans
- 1 can of mixed vegetables or corn
- Salt & peper to taste
- Chop up potatoes into cubes & add to pot.
- Chop up cabbage into small pieces & add to pot.
- Add in remaining ingredients.
- Season with salt & pepper to taste.
- Cook on stovetop on med/low for 2-3 hours. I let it simmer for a long time beyond this as well.
- Stew is done when potatoes are cooked through. I like cooking them long enough to make the ingredients come together and are a bit mushy.
- Can cook in crockpot for 3-4 hours on high or 5-6 hours on low.

First of all…is that a pretzel roll from Trader Joe’s?! Best bread ever, haha! :) This stew looks so good! I have never seen purple potatoes before – yum! Loving this #cozyinindiana theme!
