30 Minute Meal Prep #MealPreppingforBae – Simple Garlic & Soy Shrimp

 

You may or may not know that I meal prep for my husband. It usually separate from what I do for myself because we have different goals, and honestly, I like everything spicy and he is cool with a more tame meal.

Sometimes I like to get super fancy and elaborate with the things I am doing for him, but there are some weeks that I really just need to make it quick. This usually involves using things we always have on hand and can take 30 minutes or less to make 8-10 meals for him in 2 different varieties.

This week’s menu:

 

MEAL ONE

Bunless Chicken Burger

Roasted Sweet Potatoes

Green Beans

 

MEAL TWO

Garlic & Soy Shrimp (Recipe below)

Brown Rice

Broccoli

 

I immediately start the minute rice in the microwave (directions on package), then move on to putting the burgers on the burners and season with whatever seasoning I feel like for that day. The microwave is going to get a WORKOUT with one thing after the other going in, so if you are anti-microwave, this probably isn’t the tutorial for you! I then move on to the shrimp (see quick recipe below.)

Next, I throw the frozen broccoli on the stove and cook according to the package, set out my meal prep containers, and then empty canned green beans equally between the containers. They cook well in the microwave when the meal is reheated!

I pull the rice out, then stick the microwave bag of sweet potatoes in the microwave according to the package. By this time, and while that’s cooking, the proteins and broccoli are done and I can start distributing the food into the meal prep containers equally.

My last few steps are to add the sweet potatoes, let the prepped containers cool on the counter, then come back to pop the tops on and throw them in the refrigerator for him to reheat later!

He usually reheats them for 1-2 minutes in the microwave, and they keep well for the week. See the simple shrimp recipe below!

 

 

Garlic & Soy Shrimp

Ingredients
  1. 2 lb shrimp (medium, uncooked, tail off, peeled & deveined)
  2. 1/4 c. soy sauce
  3. 1 T minced garlic
  4. 1/2 T minced ginger
  5. 1 T olive oil
Instructions
  1. Heat pan & olive oil
  2. Add in the shrimp and all other ingredients
  3. Simmer until shrimp is becoming opaque
  4. Flip shrimp to cook on other side
  5. Optional: I like to turn up the heat for a minute at the end to add a bit of a crust to the shrimp
Notes
  1. Do not overcook! They are done when they are completely opaque.
