Taco Sheet Pan Chicken
Indredients
- 1 lb chicken, cubed
- 1 medium sweet potato, cubed
- 1 small red onion, cubed
- 1 bell pepper, cubed
- 1 crown of broccoli
- 1 small zucchini, cubed
- 1/2 cup grape tomatoes, whole
- 4 T Mazola® Corn Oil
- 1/4 cup taco seasoning
- 1 T minced garlic
- 1/4 c salsa
Directions
- Preheat oven to 425 degrees.
- Line baking sheet with foil for easy clean up.
- In a large bowl, combine all ingredients.
- Mix thoroughly, then spread on cooking sheet in one layer. (You can spread to multiple sheet pans if needed!)
- Bake for 25-30 minutes or until chicken is cooked through, no pink, and browned on the outside.
