When I was pregnant with Clara, I REALLY loved the McDonald’s Sausage Breakfast Burritos. The $1 quick breakfast treat was perfect to swing through and grab, but even though it was cheap, I would add on a drink or other things I didn’t need. It was really just a habit I knew I wanted to kick.
I set out to dissect the burrito and make a copycat recipe to freeze and eat every day. It took me a few tries, but by golly! I did it! I think this recipe is pretty darn close to the flavor and texture. If you’re a visual learner, you can watch my video where I show you how I make them. MCDONALD’S BREAKFAST BURRITO COPYCAT
INGREDIENTS
2 lb pork sausage
2.5-3 dozen eggs
1.5 cups milk
1 can tomatoes w/ green chiles (drained)
1 T dried minced onion
16 slices American Cheese
Salt to taste
Flour Tortillas*
*I used 20 small, 20 medium. You could use 50 small or 30-35 medium. It all depends on your appetite and the amount you put into each tortilla.
DIRECTIONS
1. Brown sausage low & slow, and about 1/2 way through cooking, add in the drained tomatoes w/ green chiles & minced onions. You will not want to make the sausage crispy to mimic McDonald’s sausage texture.
Set sausage mixture aside in large mixing bowl.
2. Mix eggs, milk, and salt to taste.
3. Scramble eggs low and slow over medium-low heat. You will want to stir often, be sure to not overcook. The perfect texture will be fluffy & light with a custard-like texture and a sheen so they are a slight bit runny. (This will help them to not over-cook when reheating.)
4. Add eggs to large mixing bowl, then add slices of cheese. Mix well & chop up large pieces of eggs.
5. Scoop approx. 1/4 cup of the mixture into small tortillas or 1/2 cup into medium tortillas.
6. Fold burritos & wrap in wax, parchment, cling wrap or foil. Store in airtight container or freezer bag until you are ready to reheat and serve.
TO REHEAT: Wrap burrito in paper towel (or just leave in parchment paper if you are lazy like me.) Cook in microwave until heated through. It REALLY depends on the power of your microwave. At home, I can cook the small burritos for about 45 seconds. At work, I have to cook them for 1:30. Take it slow, you don’t want to over-cook!
